Viet immigrated from Vietnam at sixteen and spent years working every level of the restaurant industry before opening his first concept in 2014. Today he leads Kei Concepts as CEO and Executive Chef, setting the culinary vision and standards across every brand.

The Journey

A Decade of Growth

Buena Park

SUP Noodle Bar

It started here. SUP Noodle Bar opened in Buena Park with a simple premise: pho, done at a higher standard. It was our first restaurant and the foundation everything else was built on.

Pango Taqueria

Pango Taqueria was an early experiment. Bold, ambitious, and defining. It didn't last, but it taught us more than most of our successes did.

Torrance

SUP Noodle Bar

A six-month collaboration with H-Mart's food court in Torrance. Small format, big lessons. One of our favorite chapters from the early days.

VOX Kitchen

What we learned from Pango went directly into VOX. It opened in Fountain Valley as a fusion concept and quickly became one of the most recognized restaurants in Orange County.

Cerritos

SUP Noodle Bar

Demand for SUP brought us to Cerritos. Our first expansion and proof that what we were building had real legs.

As the group grew, we needed a home base. Kei Concepts relocated its headquarters to Huntington Beach, where we've been ever since.

GEM Dining

Our first step into upscale dining. GEM opened in August 2019 and earned a spot in the 2022 Michelin Guide. A milestone that validated everything we believed about what Asian dining could be.

Opening a restaurant during a pandemic wasn't the plan. We did it anyway. NEP Cafe brought Vietnamese-French coffee and brunch to Fountain Valley at a time when the community needed a place to feel at home.

Irvine

SUP Noodle Bar

That same year, SUP expanded to Irvine. Adapting and moving forward, even in 2020, defined who we were as a company.

Huntington Beach

ROL Hand Roll Bar

We built out ROL in five weeks and opened OC's first hand roll-focused restaurant. Fast, scrappy, and exactly the kind of move we'd become known for.

KIN Izakaya

KIN started as a pop-up. By October 2021 it had its own home: a full izakaya experience built on Japanese culinary tradition and unmistakably Kei.

INI Ristorante

Japanese-inspired Italian cuisine in the heart of Little Saigon. INI was one of our most unexpected concepts and one of our most rewarding.

A step into storytelling beyond the restaurant — podcasts and conversations with creatives and industry voices. A small but meaningful chapter.

ROL Hand Roll Bar

ROL's second location opened just down the street from the original. The demand was there and we answered it.

NEP Cafe

NEP came to Irvine with something new: dinner service. A significant step for the brand and for what we believed a Vietnamese-French concept could be.

We made the decision to pause GEM and take the time to get it right. Some concepts deserve more than a second chance. They deserve a fresh one.

An intimate, reservation-only dining experience that brought our culinary team together to cook without constraints. Multi-course, globally inspired, and entirely our own.

Family Friendly Initiative

We introduced the Kids Meal Box across our concepts. A simple idea that made Kei more accessible for families dining in and taking out.

Kei Coffee House

Our take on the neighborhood coffee shop. Handcrafted drinks, in-house pastries, and a space in the heart of Little Saigon that feels like it's always been there.

ROL's third location brought our hand rolls to Irvine. Each new ROL feels like proof that the simplest ideas are often the strongest ones.

VOX Kitchen & Bar

VOX came to South Coast Plaza with a full bar, an open-air patio, and everything that made the original great — turned up.

QUA Contemporary Chinese Cuisine

QUA is our take on contemporary Chinese dining, shaped by the culinary traditions of Cholon and by what we think those flavors can become today.
